In the olden days, cooking oil was extracted in kolhu or Ghani, known as the wood pressing method. It is the best cold-pressing method as the extraction involves no external addition of heat I (the least heat is involved), and no chemicals are used. In this, seeds are cold pressed (below 35°C) to ensure the nutrients remain intact. Then, the oil sits for sedimentation for 2-3 days. Following this, it is sieve-filtered. After that, it is directly bottled, avoiding all commercialisation processes like chemical refining and deodorisation. Oil extracted in this way retains its genuine flavour, aroma, antioxidants, and nutrients. It does not alter the properties of the oil and makes them great for cooking and skin care requirements.

The regular refined oils are extracted using solvents and grinding them at high speed, which can generate heat up to 100°C, which degrades the oil’s taste and nutritional composition. Furthermore, it is chemically bleached and deodorised to make it more appealing. It is also hydrogenated to increase stability and shelf-life. Trans fats are produced in this process, making them unfit for your heart.

While cold-pressed oils or wood pressed oils are extracted by pressing and grinding seeds below 35°C. Then it is sieve-filtered and packed without undergoing any chemical refining. Though it is a slow process, it is a completely natural process. It retains the oil’s natural flavour, aroma, and nutritional value.

Refined oils are colourless, odourless and flavourless fluids.
